Dulce de leche

I cook quite a bit with my Thermomix, but not always. Sometimes I feel like cooking not just for the result but because it relaxes me and I actually enjoy the fact of doing everything myself. I even beat the egg whites by hand sometimes, just for the challenge. After that, my arms hurt real bad, but I feel extremely proud.

But there are some things I would never EVER have cooked without this robot, and dulce de leche is deifnitely one of them.

Dulce de leche is not a complex recipe, but it requires a LOT of patience: you need to cook your milk on very low heat for about 2 hours, constantly stirring and making sure it does not boil. But the Thermomix does it all by itself.


1 l semi-skimmed milk

500 g sugar

1 tablespoon vanilla seeds


1. Pour the milk, sugar in the Thermomix and add the vanilla seeds.

2. Set the Thermomix on Speed 2/ 100 °C for 5 to 10 minutes or until the mixture boils.

3. Set the Thermomix on Speed 2/ 50 °C for 2 hours and go do whatever you want in the mean time

3. Pour in a sterilised jar and keep in the fridge. You can keep it for about 2-3 weeks.

You can use dulce de leche in many desserts: as a topping for ice cream, on a fruit salad, to caramelise apples, in ice cream..

I served it on top of a banana ice cream and it was gone in a second!
