Lemon biscuits with blueberry jam


Valentine’s day caught me a bit off guard this year,we were not even supposed to do anything.My other half had too meet up with a friend,and I had decided to test my new gym. Lovebirds.

But Cupid had it is his way in the end:I arrived at the gym,realized I had forgotten my sneakers and came back home..to find him on the sofa and flowers on the table.His night out had been cancelled.

So I had to improvise some last minute valentine’s treat..and this is the story of these biscuits.


200 g flour
100 g soft butter
2 eggs
70 g sugar
Zest of one lemon
A jar of blueberry jam


1.Mix all the ingredients together,except the jam, until you obtain a big homogeneous ball of dough.

2. Wrap the dough in kitchen foil and leave in the fridge for an hour so that gets easier to work.Or if you are in a hurry,put in the freezer for 15 mn.

3.Dust your table top and pastry roll with flour so that the dough does not stick to it.

4.Flatten the dough until 3 mm thick and cut out circles (8-10 cm diameter)

5.Divide your pastry circles into two equal groups.On the first group spread a spoonful of jam,leave out 2mm on the sides.

6. Cut out heart shapes in the second group of circles,and superpose them on top of the circles already covered with jam.


7. Press the sides of both circles together with your fingertips to trap the jam between the two layers of dough.

8. Bake in the oven for 10mn at 200 degrees.Let the biscuits cool down before eating.
